Charge-capture billing engine fully deployed: 34,205 SKUs backfilled, financial + gateway routes live

The ghost-ledger charge-capture engine is fully deployed. Orders flow order → ghost → realized → sales order → cashier through a billable_ledger, with a resolve_menu_price function and atomic realize/void operations, plus a labor cancel cascade.

All migrations 20260609a-g are live on the demo Supabase, edge functions v43/v2 are active, and the financial and gateway services already serve the routes — no restart was needed.

The menu backfill ran across the full product catalog, materializing 34,205 SKUs, and a live end-to-end test passed.
